A wide range of top-class white fish species are landed daily at Lerwick and Scalloway fish markets, and the islands’ long tradition in mackerel and herring fisheries continues with state-of-the-art pelagic vessels based in the islands landing catches for markets across the world.
The climate and strong tidal currents provide ideal growing conditions for superior quality salmon, rope-grown mussels, oysters, and wild shellfish.
A wide variety of species, including cod, haddock, whiting, and monkfish, is landed at the fishing ports of Lerwick and Scalloway.
The market for white fish has changed in recent years to become more discerning, with customers actively seeking premium quality fresh product. White fish caught in Shetland’s waters exceeds expectations and, as a result, is sought after in top restaurants, hotels and fishmongers.

Shetland’s salmon farming industry recognises that their future depends on the environment remaining in pristine condition. Through careful husbandry, environmental care and quality control, farmers continue to produce a top quality product.
Shetland salmon is sold all year round to markets throughout the UK, Europe, and the United States, either chilled or frozen whole, in steaks or fillets. Most fish is sold to suppliers in the retail sector or to secondary processing customers who appreciate the quality of the raw product.

Rope-grown mussels from farms in Shetland became the first enhanced fisheries in Scotland to be MSC-certified in June 2012. MSC certification verifies that the mussels meet exacting standards for sustainable fishing and aquaculture practices.
The suspended ropes are designed to minimise impact on the seabed, reducing habitat disruption and maintaining a healthy ecosystem.
Some 75 per cent of Scotland’s farmed mussels are produced in Shetland.
Another welcome addition to the Shetland shellfish growing industry is an oyster enterprise, which has recently started production.
